Anybody got a good Hush puppy recipe?

1 cup self rising white cornmeal mix
1/2 cup self rising flour
1 Tbsp sugar
1 Large egg
1/2 cup warm beer
1/2 cup diced onion
1/2 cup chopped bell pepper
1 jalapeno pepper chopped
1/4 tsp. garlic powder

Combine 1st 3 ingredients in a large bowl.
Combine next 6 ingredients in a small bowl.
Stir wet ingredients into dry ingredients just until moistened.
Cover with clear plastic wrap at room temperature for 1 hour.
Drop by Tbsp. into 375 degree peanut oil until browned. [about 2 minutes per side]
Drain on paper towels.

Hush Puppies

1 1/2 cups yellow cornmeal, hey, if all you got is white cornmeal use it.
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon Tobasco or other hot sauce
1/4 cup minced onions
2 jalapenos, minced
2 large eggs, beaten
1/2 cup milk

Preheat oil to about 375. Mix ingredients till fully incorporated. Drop batter 1 tablespoon at a time. Fry the hushpuppies for 2 to 3 minutes or until they are golden brown. Drain on paper towels.

Both recipes sound really great. I've used beer in the recipe before and it really makes them light.
