My wife made some stuffed bell peppers this weekend and instead of stuffing them with meat, she mixed shredded colby jack, diced onions, diced tomatoes, diced bell pepper. diced chili pepper and diced jalapenos and stuffed the peppers and baked them in the oven. Just before they were done, she put some sliced ham on them and left them under the broiler long enough for the ham to brown. These things were so good that if you put a small piece on top of your head, your tongue would beat your brains out trying to get to it
