I'm also intrigued by BB's Nana"s ability to make Pepsi taste good just by pouring it. The ability to make Pepsi taste good under any circumstances can't be scoffed at.

Thank you but honestly, it's really not that hard. I always did like to cook and started picking up cookbooks. I must have a hundred of them. Back in the mid to late 80's I decided to take some cooking classes. I didn't take the restaurant management part of the course or that many of the health and nutrituon parts either. I went straight for the chopping and dicing. I was the oldest guy in the class. I took it more as a leasure learning. When people tell you to learn the basics, that's a lot of learning. I still have to look at measuring charts and temp. conversions. I can't remember it all.
While there are still plenty of ethnic restaurants out there, we are seeing more and more fusion cooking springing up. Asian/French, Cajun/American comfort foods, Tex/Mex, Spanish/Italian. Chefs all over the world are bending or breaking the rules. Add a little asian slaw to go with that classic meat loaf or some fried green tomatoes to go with the homemade enchiladas. If someone says you are mixing cultures, simply reply YES.
