Pineapple Casserole

2 large cans Pineapple chunks drained
1 cup sugar
5 tablespoons all-purpose flour
1 1/2 cups sharp grated cheddar cheese
3/4 cup ritz crackers crushed
1 stick of butter melted

Place pineapple in a 2qt. ungreased casserole dish.Combine flour and sugar,pour over Pineapple.Sprinkle cheese over top.Sprinkle ritz crackers on top of cheese.Top with melted butter.Bake at 350 for thirty minutes.Serve hot.
Great served with ham!

Try this with brie or camambert cheese instead of the usual cheddar.

Recipe: Pineapple Casserole

It's funny my wife was just saying she wanted to make that tomorrow and we were looking for the recipe. It is a delicious treat. If any of you haven't tried it I suggest you do. This is our version:

1 #2 can crushed Pineapple
1 cup grated cheddar cheese
1 cup sugar
2 Tblsp. flour
1/2 tsp. pineapple flavoring
1 cup dried bread crumbs
2 Tblsp. butter

Mix the drained pineapple with the grated cheese. Mix the flour and sugar in saucepan and add the juice from the drained pineapple and the pineapple flavoring. Heat just to blend well. Putthe pineapple-cheese mixture in an 8" square baking dish and cover with the sauce. Top with the bread crumbs and dot with butter. Bake at 350 for 20 to 25 minutes or until lightly browned.
