Burger Sauces

Simple but tasty.

1 Chipotle pepper in adobo sauce, sliced thinly. More or less to taste. (available in Mexican food section of Krogers.)
1/3 cup Honey
2 Tablespoons Mayonnaise
2 Tablespoons Ketchup
1 Tablespoon Yellow Mustard

Just mix sauce ingredients in a bowl and spread on buns along with your favorite toppings.

Nice. I used to marinate my burger with Virgil's BBQ sauce and then grill it. Tasty, a little bit of a hickory flavor. Virgil's is a great BBQ place in Manhattan. They jar their own sauce. You can buy them there.

Just curious. Is the BBQ there pulled or chopped?

On a business trip to Dover, NJ I ate at a BBQ place (I don't remember the name) and I didn't even recognize what they served.

I'm interested to read how folks prepare their burgers. I have a gas grill, so I have to manufacture the flavor. I use alot of mesquite seasoning, some barbeque sauce, some red pepper, and an egg or two. I mix it all up then throw it on the grill or in the skillet. Either way they come out tasting mighty fine.

Honestly I like my burgers cooked on a griddle. That is the best way to get that "Truck Stop, Greasy Spoon" flavor I enjoyed growing up. They are about as healthy as drinking a pig fat milk shake with double butter but they taste good. I season them with salt and pepper not much else. Occasionally I will mix in some wostershire sauce but not always. I like things like grilled onions, grilled peppers, jalapenos, grilled mushrooms cooked in the same grease and a variety of cheese depending on what is on hand. My stove has a built in griddle but I also have a two burner cast iron grill / griddle made by Lodge that is well seasoned. I sometimes take the Lodge outside to the gas grill and let it heat up. The cast iron griddle has a lot of seasoning in it.

For a group:

5 lbs. ground chuck
1 Cup applesauce
2 Cups crushed Ritz crackers
5 Tbsp. Worcestershire sauce
3 Tbsp. hot sauce
1/2 tsp. garlic powder
1 package Lipton Onion Soup mix
Salt or seasoning salt (such as Accent) to taste

Mix all ingredients well and make into patties.
Note: When making patties, compress meat just until patty keeps its shape.
