Corn Casserole

Share

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Re: Corn Casserole

I'll pass on your CC salad, but your corn casserole recipe sounds great. I'll try it this week and if it tastes as good as I think it will....I'll add it to my turkey day menu.

Thanks for posting it.

Re: Corn Casserole

A lady at work made the CC salad and I thoought it was good and ask her
for the recipe.

The corn casserole is a Paula Dean recipe. I have gotten so I just really

Re: Corn Casserole

I like Paula Dean, like her recipes and have most of her cookbooks some are signed. But, I am getting to where I can't stand to watch her on TV, she can be just a little too over the top and reminds me too much of a cousin I have.

She has no concept of *less butter, less fat, or less oil.*

And her accent is insufferable sometimes. I say this as a born-and-bred Southerner. It's legal for southern people to talk without it sounding like, "yaww yaww yaaaawwww uh-huuuuuuuuuhhhh."

The reason I said I would pass on your CC salad had nothing to do with the recipe you posted. My parents thought jello was the ideal dessert, and served it relentlessly. At their house, you ate what was put in front of you.

I don't really hate it, but on a list of my favorite 1,000 desserts, it would be listed last. LOL

I love Paula Deen -- but I agree with her TV show lately. Wish she'd just go back to cooking in her kitchen alone! I would like to have her new Christmas Book coming out.

You are so right Jack. Paula comes across as a throwback from Hee Haw.
