Smile Thanksgiving aftermath

Everyone liked the fried turkey what's not to like about a big jucy fried bird. There is very little left for sandwiches but we did pick the carcass for meat to make a gumbo out of with some smoky link sausage.

The real show stopper was the spiral sliced ham that was smoked on the big green egg using apple wood chunks. The smoke penetrated into the ham and it was delicious. As soon as it came off the pit a brown sugar bourbon glaze was poured over the outside and allowed to sit till it set. Very simple glaze, a cup of brown sugar, about a quarter cup of light corn syrup and a shot of bourbon all in a sauce pan stirring till the sugars dissolve. Add a little water by the spoon full if needed, I added two teaspoons. The ham was amazing and simple.

Half a pan of cornbread dressing is left over along with plenty of turkey gravy, this will make a fine lunch with leftover green bean casserole and sliced turkey. There is also plenty of cranberry salad and carrot souffle. I might hide the carrot souffle, it was great.

18 regular and 6 square deviled eggs were all consumed. The square eggs are always a great conversation piece. I made a few spicy eggs this year with horseradish and pepper vinegar topped with sliced pickled jalapeno. The guys snapped them up before the table was set. I didn't even get one but I hear they were good.

We made two dozen homemade clover leaf dinner rolls. Not the best I have had but they were all consumed.

There were pies, pies and more pies, everyone brought a pie. Sweet potato pie, Vinegar pie, cherry cheese cake, Chocolate Pecan pie and a pan of gingerbread with fresh whipped cream. There is a lot of desert left over that should last into the week end.

I don't know about the rest of you but today was a great success to be with friends and family where nothing but kind words were spoken and everyone enjoyed the day.

My wife was already commenting on the gumbo yet to be made as well. As there was only 5 of us there is enough turkey and ham left over for my world famous turkey salad (my wife named it not me). The ham gets a second life as "sugar fried" along with homemade biscuits, over easy eggs, grits, and red eye gravy.

I think I finally had my fill of turkey today at lunch. Tonight, went out for a juicy burger & onion rings @ Cheeburger Cheeburger!

Sounds like a really delicious dinner Bayou. At some other time it might even sound mouth watering. But in my current state of having over eaten for two days I don't think I can stand anymore turkey. Tonight we made stock out of the carcasse, put the good left overs in the freezer and tomorrow we are going out for a change in cuisne.

That's a good burger and they have good fries and onion rings but my goodness at the prices. I can go to Outback for what a meal at Cheeseburger Cheeseburger cost.

Tell me more about the BGE Smoked Ham; weight, was it already spiral cut, Cooking Temperture, duration or internal temp?

This sounds ideal to have for our annual open house on the 13th.

The ham was already cut. We set the temp at 200-250F after putting plenty of soaked apple wood chunks on the coals. We smoked it for no more than 2 hours, probably more like hour and thirty or forty minutes.

The glaze:
1 cup light brown sugar
1 tbsp orange zest
1/4 tsp allspice
1/8 tsp ground clove
4 oz whisky

Put all in small sauce pan and stir to dissolve the sugar. If you need more liquid add water or more whisky by the tsp.

You will end up with a syrup. Lay the ham cut side down on a platter and spoon the glaze down the sides and let set. A brush can be used to make the glaze more even.
