Check out Smoke and Spice by Bill and Cheryl Jamison. This book is great. It deals with smokers and how to smoke meat. Talks about differrent types of wood, what kind of results you can expect from each. It has recipes for dry rubs, marinades, beef , pork , fowl , you name it. It adds shouts to different well know BBQ places all across the country. Dreamland is included.

Great book for a newbie to smoked food like myself.
