You'll notice that everyone pretty much agrees that once you add your shrimp, don't cook them longer than 3 minutes top. They'll turn pretty & pink. I love spicy Conecuh sausage in my "low country boil"!
I don't know how big your pot is or how spicy you like your food but if you add lots of ice at the end after turning off the heat and let the shrimp, etc. soak in the juice they will soak up more flavor. It won't turn everything stone cold but it will slow down the cooking and keep the shrimp from being rubbery. Eat while everything is still warm.
If you want to find a use for the liquid you boiled everything in boil some peanuts.
Best desert in the world would be ice cold melons.
I agree with newspaper or plastic on the table. Drag a garbage can up to one end of the table and put a couple rolls of paper towels on the table for everyone. Squeeze bottles or spray bottles of butter, cocktail sauce and cold drinks. It's good and messy, you can tell you are getting full by how much food you are wearing on your shirt.
Went great! I did 4 pounds of shrimp, with all the goodies: red potatoes, onion, corn, lemon, garlic, and the cajun seasoning. Put it all out on a table covered in news paper as recommended and dug in. Needless to say the food didn't take long to disappear. I had planned on taking some pictures to post but forgot to. Thanks for all the tips guys.
And dont forget Conecuh Sausage too it makes the shrimp a little bit slippery to peel, but they are the best sausage you'll put in ur mouth when you boil them with everything.
