I just took out some country style pork ribs to thaw , gonna add a couple of yardbirds , some flank steak , some burgers and maybe a link or two of sausage.

It's not a holliday here so we don't make a big deal about it but celebrate just because we have in the past.

Meatloaf Burgers

1 1/2" slices leftover meatloaf reheated on the grill.
Cut piece of fresh French bread to size and remove a bit of the inside bread.
Slather some good mayo on the bottom of the bread, add the meatloaf slice the top with tomato sauce mixed with a bit of brown sugar and worchestershire {same topping used on meatloaf) then add mozzarella cheese. Let warm on the grill till the cheese melts and top bun gets toasty. Dress with shredded lettuce, tomato if you like.

Belgian Fries - The French really didn't invent these.

Cut potatoes into 1/4" sticks and let soak in water for at least 30 minutes to remove as much starch as possible. Next dry the potato sticks and fry in oil 325 for about 5 minutes or just till some color starts to show, then remove and drain on paper. Raise oil temp to 375 and fry the potatoes a second time for about 2 - 3 minutes where they will be nice and crispy on the outside and tender in the middle. Season with salt and pepper before serving.

Decadent onion and pepper rings

Melt a quart of vanilla ice cream.
Slice a white or bermuda onion into thin slices. Slice a red bell pepper into rings, Yellow ones are good too but not the green as they are more bitter.
In a large bowl mix together 3 cups flour and about 1/3 cup creole seasoning (salt, black & red pepper, onion powder, garlic powder, oregano).
Heat oil to 370
Dust the onion and pepper slices with flour mix then dip into the melted ice cream then back into the flour.
Fry till golden brown.

To Drink

Filtered water flavored with lemon peel and cucumber.

Desert

Leftover yellow cake with milk chocolate frosting & cold glass of milk

I'm stuck workin in the restaurant, so looks like its gonna be oysters and politics for me. I may try to grab some hot dogs and conecuh sausage to throw on the grill for the staff tho, as this is usually a very slow day for us.

For lunch, I took a break from putting my house back together (hardwood flooring), to fire up the grill for some Fairbury stadium dogs (expensive hotdogs, but well worth it) and kettle chips.

For dinner, I fired up the grill for a bourbon-maple marinaded pork tenderloin, with rosemary new potatoes and green beans.

Oh, and the Moosehead lager was ice cold.
