The wife-to-be had the great idea that I should make the BBQ sauce for the big cookout we are having after our wedding cruise. We are having approximately 200 people show up and will be serving pulled pork, grilled chicken, and smoked turkey. All of the people will be from the Jacksonville, FL area.
From experience, does anyone have an suggestions and/or recipes for a homemade BBQ sauce?

Thank you!
Traditional pulled pork using a vinegar sauce.
1 cup white vinegar
1 cup apple cider vinegar
1 tbsp brown sugar
1 tbsp red pepper flakes
1 tbsp kosher salt
multiply this by 200 people, mix well and let sit overnight in the fridge. Use to baste the pork then mix the rest into the meat after pulling.
Or you might want to use this one.
1 cup apple cider vinegar
1 cup ketchup
3 tablespoons packed dark brown sugar
1 tablespoon yellow mustard
1 tablespoon molasses
1 teaspoon salt
1/2 teaspoon dried crushed red pepper
To be honest I would use a bottled sauce, pour it all in a bucket, doctor it up a little bit and call it homemade.
Re: Recommendations/Recipes for a homemade BBQ sauce
Those offered by Mr. Bayoutider are both good. Mr Buzzard has one that I have adopted recently that is also good and worth considering. It's mighty good on ribs, pulled pork or chicken. Hope he doesn't mind if I post it here...
Re: Recommendations/Recipes for a homemade BBQ sauce
I have my own personal recipe for sauce, I call it Tenn river BBQ sauce. I will give you the recipe if you want it when I get home tonight. Geno
PS it is the best I have ever had and everyone that try's it say i need to sell it.

Alabama is 2- and 3-deep all over the place with full grown, meaner-than-he!! men. It's almost not fair making college kids play against them. Any Saban-coached team is going to be deep as he!! with recruits that have elite size, strength and experience at their position and they are going to play with incredible physicality.
I support PAWS.

Check out my rib rub and mop sauce recipe on the Iron Chef thread for this week. The mop sauce is a South Carolina yellow mustard sauce.

That vinegar sauce is how they do it in South Carolina I believe.. Pretty good.
North Carolina loves the thin vinegar sauce, while South Carolina has the yellow mustard based thick sauce. I started doing the SC sauce several years ago when my uncle (who lives in Darlington) gave me his recipe.

(personally I would add some cayenne pepper, garlic powder and a pinch of cinnamon)
BBQ Sauce
2 cups ketchup
1 cup water
1/4 cup brown sugar
1/4 cup granulated sugar
1 1/2 tsp fresh ground black pepper
1 1/2 tsp onion powder
1 1/2 tsp dry mustard powder
2 tbsp fresh lemon juice
2 tbsp worchestershire sauce
1/2 cup apple cider vinegar
2 tbsp light corn syrup
1 tbsp Neely's BBQ seasoning
Put everything in a pot and bring to a boil stirring frequently to prevent sticking. Reduce temp to very low and simmer uncovered at least 2 hours stirring occasionally. Remove from heat and cool before using. Will keep covered in fridge for up to 2 months.
The Neely's don't use salt saying the ketchup has enough salt in it but if you feel you need to add salt do so to your taste.
The big question is how much sauce do you need to make? I hope I have done the calculations correctly and have come up with 4 gallons of sauce. So get out the pocket calculator and get busy.
