Easy way not to burn chicken when grilling.

Most folks burn chicken like our government burns up money. If you are a "chicken burner" try this. Grill it on indirect heat. If you have a gas grill cut two burners on and leave one off. Put chicken on area that the burner is off and let the heat from the other two cook it. If you cook over charcoal leave one area of the grill without any charcoal and place chicken on that part of the grates. Let the heat from the "other side" of the grill cook it. Ever since I started doing this I haven't burned chicken. I used to burn chicken constantly and get so mad.

If you have a Big Green Egg use what they call their Plate Setter. Place it in the BGE with the legs pointed up, you can also add a pan of water between the plate setter and the grilling surface. The Plate Setter turns the BGE into a convection oven.

On other grills use a drip pan under the chicken with some water. Arrange your fire on the sides of the pan like buzzard suggested and the moisture will make your chicken juicy while the chicken won't be burnt to a crisp.
