Sausage/Brat, Peppers, Onion Hogies

Many ways to make this simple favorite but this is how I do it. The meat is up to you. Use Johnsonville Brats, Sweet or hot Italian sausage...whatever you like.

Warning! I never measure anything, so add or take away quantities below to your taste. I am guesstimating as to what I normally use

4 Sausages
1 Large yellow onion cut into rings
1 Large green pepper seeded and cut into strips.
1+ Tsp minced garlic
1+ Tbsp Lemon or lime juice
1+ Tsp freshly ground coarse black pepper
1/8 Tsp salt
1/2 Tsp crushed red pepper
1 Tbsp olive oil
1 Tbsp Butter or margarine
1+ Splash of dark beer (if you happen to be drinking one )
4 Big fat hoagie rolls (Pepperidge Farms)
Brown mustard

  • Fire up the grill!
  • In a large pan (on the stove) over medium heat, combine olive oil, butter, black pepper, crushed red pepper, salt, lemon juice, garlic and beer.
  • Stir until the mixture starts bubble lightly, then add green pepper.
  • Throw sausages on the grill
  • Saute peppers for about 2-3 minutes and then add onion.
  • Rotate sausages and saute the onions/pepper (multitask)
  • After a few minutes, reduce heat on onion/peppers and cover with tight fitting lid. Stir well every few minutes and recover. Continue to cook covered for about 5-minutes
  • Taste onion/peppers and add more of what you like. When done, onions should be limp and lightly brown with no excess liquid left in the pan.
  • Grill sausages until just before they start to pop open
Place sausage to roll, add mustard and onion/peppers...holy cow!

Man you can't beat a good sausage dog....I keep a pack of good ol' Conecuh Sausage in my fridge at all times for just such an occasion. I never have really got into bratwurst that much...dunno why ha

I never cared for the white bratwurst, but the regular Johnsonville brats are good. They are more like a mild Italian sausage.

Make em on a hoagie as described with a side of mustard tater salad and you have a meal
