I have been scratching my head to figure out a theme menu for North Texas game. Some kind of BBQ is a no brainer but with Baby Back Ribs on the list for the Arkansauce game I dont want to do them two weeks in a row. What do you think of this as a mix of deep south and cowboy cooking.

Hash Brown Casserole
Seasoned Pinto Beans (onions, peppers & ham hock)- might add some link sausage to this.
Mixed Greens (turnip and mustard)
Mexican Cornbread
Sliced tomato
Ice Cold Beer
I've never been a fan of beef ribs. My encounters with them have been so poor that I've never even attempted to cook them - kinda the same with brisket.
I hear ya on the pork for Arkansauce, and IMO it's hard to beat a well cooked St. Louis rack. I've never been big on beans or greens either... what's wrong with me? I must not be a true southerner!
You've definitely got the Tex-Mex down though and some Mexican cornbread would be gooooood!

I put my beef ribs on the smoker for about an hour to get some smoke flavor on them then transfer them to a slow cooker where they cook on low for about 4-6 hours on a rack with some liquid under them. An occasional spray of some liquid and the meat is falling off the bone.
Same for a brisket. Get some smoke on the meat then double wrap in foil with a good spray of liquid then put back on low grill, oven or slow cooker for a few hours depending on the size.

I'll have to go Tex-Mex for this one. Fajitas with all the trimmings. Pineapple Pico De Gallo , Charro Beans and Spanish Rice. Wish I could toss in a couple of Margaritas but 10 years sober and I aint about to mess that up.

Why not mix up some virgin margaritas with salt rimmed glasses.
