What's the best way to cook a steak not using a grill?

I have never tried cooking a steak any way but on the grill. I wanted to try something a little different tomorrow night so any suggestions would be greatly appreciated! Do you marinate and use rubs the same way? I'm just completely in the dark in the kitchen! I'm ok outside on the grill though!

Very hot cast iron skillet on top of stove. Season just like you were going to use the grill.

Be sure to turn on the vent hood fan.

Thanks BigTex, I was about to put a link there myself..

Sear the steak on each side for your doneness (about 3 minutes per side for medium)..take steaks out and wrap in foil...add about a tablespoon of butter, scrape "goodies" up with wooden spoon...add portabello mushrooms and vidalia onions, sautee and add about a 1/4 cup of Merlot or Cabernet Sauvignon. cook to reduce it down and put on top of steaks.

Just curious...always heard that it doesnt matter much about the quality of the wine that you cook with. As long as you dont use a bottle from 2 Buck Chucks that is. True ?

I always cook with wine that I would drink. I'm not a huge wine drinker mind you, but I was always taught not to cook with it if you wouldnt pour yourself a glass of it. When I cook my steaks like this, I use Clos du Bois Cabernet Sauvignon...roughly 17-20 bucks a bottle..

For those who don't drink much wine or don't drink at all but want to use wine in cooking try some of the small bottles that come in a four pack this way you dont have to open a full size bottle to get a cup of wine. There are a few that come in the four packs that are actually pretty fair wines, surely good enough to cook with. I would stay away from that stuff you find with the vinegars called cooking sherry.
