Description:
This is an old Cajun dish to use up that rice from the last meal. The dish should come out almost creamy in texture since you don't want to fully cook the yolks. Make toast or a pan of biscuits.

  1. 9 lg eggs
  2. 3 cups cooked white rice
  3. 1/2 cup green onion
  4. 1/4 cup parsley
  5. 1/2 cup diced ham
  6. 6 strips bacon
Preparation:
  1. chop onions
  2. chop parsley
  3. dice ham
  4. heat 12" skillet
Instructions:
  1. Fry the bacon crisp, drain bacon and crush.
  2. Fry the eggs sunny side up till whites are set.
  3. Add the rice, onion, parsley, ham and bacon.
  4. Stir well breaking all the yokes turning the dish bright yellow.
  5. Serve hot.
