Tomatoes Stuffed with Orzo-Feta Salad

  1. 2 cups cooked orzo (about 1 cup uncooked rice-shaped pasta)
  2. 1 1/2 cups diced cucumber
  3. 1 cup chopped fresh parsley
  4. 1/2 cup (2 ounces) crumbled feta cheese
  5. 1/4 cup diced red onion
  6. 1 tablespoon chopped fresh chives
  7. 1 tablespoon extra-virgin olive oil
  8. 1 tablespoon balsamic vinegar
  9. 1 tablespoon fresh lemon juice
  10. 1/4 teaspoon salt
  11. 1/8 teaspoon black pepper
  12. 4 large tomatoes
Preparation:
  1. Use best tomatoes you can find
Instructions:
  1. Combine first 11 ingredients in a large bowl.
  2. Remove cores from tomatoes.
  3. Cut each tomato into 8 wedges, cutting to, but not through, the other end.
  4. Place 1 tomato on each of 4 plates; top with 1 1/4 cups orzo mixture.

Made this tonight to go with grilled white marlin steaks. Also made a mango salsa the whole meal was great and I will make this again.
