Fresh Blueberry Banana Bread

Description:
This is a great summer recipe using fresh, organic blueberries and bananas. It's very easy and a great way to get rid of ripe bananas.

Serving Size:
1 loaf
  1. 1 cup fresh blueberries
  2. 2 tablespoons flour plus 1 3/4 cups flour (separate uses)
  3. 2 teaspoon baking powder
  4. 1/4 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 1/3 cup butter flavored Crisco
  7. 2/3 cup sugar
  8. 2 eggs
  9. 1 cup mashed ripe bananas
  10. Topping:
  11. 1/3 cup brown sugar
  12. 1/4 cup flour
  13. 2 teaspoon cinnamon
  14. 1/3 cup ground nuts (walnuts or pecans)
  15. 1/4 cup melted butter
Preparation:
  1. Preheat oven to 350 degrees.
  2. Toss the washed blueberries with 2 tablespoons flour. Set aside. Sift the remaining flour, baking powder, baking soda and salt together. Set aside.
Instructions:
  1. In large bowl, cream the Crisco and gradually beat in the sugar until fluffy. Beat in the eggs, one at a time. Add the flour mixture alternately with the mashed banana, stirring until blended. Stir in the blueberries.

  2. Pour mixture into greased loaf pan. Combine topping ingredients, sprinkle on top of batter. Bake for 50 to 60 minutes or until a toothpick comes out clean.
