Creamy Wild-Rice Soup with Smoked Turkey

Description:
since it is starting to get a little cooler out, (it was 50 yesterday morning here in Ohio) thought it would be a good time to get some soup recipes posted.
Other: Ingredients:

easy
Serving Size:
8 1 cup servings
  1. 2 teaspoons butter or stick margarine
  2. 1 cup chopped carrot
  3. 1 cup chopped onion
  4. 1 cup chopped green onions
  5. 1 teaspoon chopped fresh or 1/4 teaspoon dried rosemary
  6. 1/4 teaspoon black pepper
  7. 3 garlic cloves, minced
  8. 2 (16-ounce) cans fat-free, less-sodium chicken broth
  9. 1 1/2 cups chopped smoked turkey breast (1/2 pound)
  10. 1 cup uncooked wild rice
  11. 1/3 cup all-purpose flour
  12. 2 3/4 cups 2% reduced-fat milk
  13. 2 tablespoons dry sherry
  14. 1/2 teaspoon salt
Preparation:
  1. Some variations to consider:
  2. Using rotisserie chicken instead of turkey
  3. Adding mushrooms
  4. Adding hot sauce
  5. Adding different/more veggies
Instructions:
  1. Melt the butter in a Dutch oven over medium-high heat.
  2. Add carrot, onion, green onions, rosemary, black pepper & garlic. Sauté 8 minutes or until browned.
  3. Stir in broth, scraping pan to loosen browned bits. Stir in turkey and rice; bring to a boil.
  4. Cover, reduce heat, and simmer 1 hour and 15 minutes or until rice is tender.

  5. Lightly spoon flour into a dry measuring cup; level with a knife.
  6. Combine flour and milk in a small bowl, stirring with a whisk. Add to pan.
  7. Cook over medium heat until thick (about 8 minutes), stirring frequently.
  8. Stir in sherry and salt.

We cook soup year around, hot or cool. There are usually two soups in the fridge all the time. They are a quick and easy lunch, nutritious and are a good way to use up leftovers in some. This one is different enough to try out and put it in our rotation.

Thanks. I thought about joining the competition but I am just not that creative. I think I would stress out more then anything trying to come up with good recipes to submit!
