Cast Iron Home Fries

Cast Iron Home Fries by Bobby Flay and BamaGoose

Prep:15min Cook:35min

Serving Size:
4
  1. 2 pounds new red potatoes, cooked until tender and halved
  2. 1 Spanish onion, peeled and cut into 1/4-inch thick slices
  3. 1 red bell pepper
  4. 1 yellow bell pepper
  5. 2 jalapeno chiles
  6. Vegetable oil
  7. Salt and freshly ground pepper
  8. 2 tablespoons butter
Preparation:
  1. Heat grill to high. Brush potatoes halves, onion slices, peppers, and chiles with oil and season with salt and pepper, to taste. Grill potatoes and onions for 2 to 3 minutes per side or until just cooked through and slightly charred. Remove from heat, cut each potato half in half again, and finely chop the onions.
Instructions:
  1. Grill peppers and chiles until charred on all sides. Remove from the grill, place in a bowl, cover, and let steam for 5 minutes. Remove skin and finely dice.
  2. Melt butter in a 9-inch cast iron skillet on the grates of the grill. Add the potatoes, onions, peppers, and chiles all in 1 layer and pack down. Cook until crisp and nicely browned.

When I make any kind of home fries (if i dont have left over salt potatos or baked potatos).. I always throw raw potatos in the microwave first and cook em... then let em cool... then dice em up... they cook a lot faster and crisp up a lot better that way I think..

Thanks Jon for trying this out. I forget about this Recipe Forum from time to time. These are very tasty and different especially with jalapeno's. The taste is an explosion. I do like to burn my taters to a crisp.
