Smoked Oysters (BIG GREEN EGG)

Description:
Any grill will do but I do like my BGE. Make these by the dozen on pizza pans.

Serving Size:
1 -4 people
  1. 12 oysters on half shell
  2. 1/4 tsp pepper
  3. 1/8 tsp salt
  4. 2 tbsp parsley
  5. 3 tbsp chopped green onion (green & white parts)
  6. 1/4 cup softened butter
  7. 1 lemon juiced
  8. Tabasco sauce
  9. 1/4 cup panko bread crumbs
  10. 1/4 cup parmesan cheese
Preparation:
  1. Fill pizza pans with 1/2" rock salt to hold oyster shells upright
  2. Shuck oysters and drain liquid. Loosen oyster from shell
  3. Build fire in pit to 300F and add wood chips, grape vines or corn cobs. I really like apple wood for this.
Instructions:
  1. Place oysters in shell on the bed of salt and salt and pepper them.
  2. Combine butter, onion, parsley, lemon juice and Tabasco.
  3. Dot oysters with mixture.
  4. Combine bread crumbs and cheese and sprinkle on top.
  5. Smoke on pit for 15 minutes or till breadcrumbs are brown and edges of oysters curl.
