I may have already posted this but since the cottage fries were such a big hit here is another super good potato dish made in one pot.
This is an easy supper with just a little slicing, open a bag and a can or two. Its a one pot meal that won't leave you hungry later.

  1. 1 to 1 1/2 lb link sausage
  2. 1 large onion
  3. 1 large bulb of fennel or another medium onion
  4. 1 tsp dry oregano
  5. salt & pepper
  6. 1 cup more or less beef stock
  7. 1 can diced tomatoes undrained.
  8. 1 bag frozen diced hash brown potatoes
Preparation:
  1. Slice up the sausage into wheels.
  2. cut onion in half then slice thin
  3. remove tops from fennel, cut in half and remove hard core at bottom if not using fennel you can add another onion.
Instructions:
  1. brown sausage in skillet
  2. add onion and fennel then stir till they start to turn clear
  3. add the rest of the ingredients and stir (start with 1/2 cup beef broth and add more if necessary)
  4. cook over medium high heat till done all liquid should be absorbed in the dish but nothing sticking to the bottom.
  5. serve hot.
