Potato casserole

This casserole is delicious.
Other: Ingredients:

Serving Size:
N/A
  1. 8 to 10 medium red potatoes (I leave skin on)
  2. 1/2 cup mayo
  3. 1/2 cup sour cream
  4. 3 slices raw bacon, cut up small
  5. 2 cups shredded monteray jack/colby cheese
  6. 1 medium onion, chopped
  7. 1/2 cup sliced green olives
Instructions:
  1. Dice and boil potatoes.
  2. Drain potatoes, salt and pepper to taste.
  3. Mix with cheese, onions, and mayo/sour cream combo.
  4. Pour into greased casserole dish and top with bacon and green olives.
  5. Bake at 325 degrees uncovered for one hour. Just make sure bacon is cooked thoroughly.
