Cypress Inn Recipe: Fried Green Tomatoes w/Dressing

Instructions:
  1. Egg Wash:
  2. 2 whole eggs
  3. 1/2 cup butter milk

  4. Whisk eggs and milk together.

  5. Breading:
  6. 1 cup white cornmeal
  7. 1/4 cup yellow cornmeal
  8. 1/4 cup all-purpose flour
  9. 1 tablespoon salt
  10. 1/2 teaspoon pepper
  11. Pinch cayenne pepper

  12. Mix all ingredients together.

  13. Fried Green Tomatoes:
  14. 3 slices green tomatoes, sliced 1/4-inch thick
  15. Dip green tomato slices into egg wash and dredge in breading.

  16. Deep fry tomato slices in hot oil (370 degrees F) until crispy and
  17. brown -- about 3 to 4 minutes.

  18. Remove from oil and let drain on paper towels.

  19. Memphis Dressing:
  20. 1 teaspoon fresh lemon juice
  21. 2 cups mayonnaise
  22. 2 ounces chili sauce
  23. 2 pepperoncini, diced
  24. 1/2 teaspoon pepperoncini juice
  25. Pinch white pepper
  26. 1 tablespoon capers, chopped
  27. 1 tablespoon feta cheese, crumbled

  28. Whisk together all ingredients except feta cheese and chill for 1
  29. hour.

  30. Place fried green tomatoes on plate with Memphis dressing.

  31. Garnish with feta cheese.

Delicious. That is the same recipe i use for fried green tomatoes. One thought though is why use 1 cup white cornmeal and 1 cup yellow? The only difference between them is the color and after frying golden brown there is no difference at all. I'm just saying 1 1/4 cup of either color corn meal would be the same but the blue corn meal would be one color that would turn out darker and probably be less appealing to the eye. I want to try your Memphis sauce, that could be a keeper for me.

I can just picture this as a show stopper on a simple white salad plate 3 fried green tomatoes stacked in a line with a battered and fried red bell pepper slice placed on top, drizzle some of the Memphis Sauce down the row of tomatoes, add the feta cheese crumbles on top and garnish with some whole chives to give some height and a splash of more color. That just sounds fabulous. Thanks BL.
