Pinto Bean Pie

Description:
If you've never had one, I already know the look on your face. If you have had one, then you know how awesome they are. Tastes kinda like pecan pie but not as rich.
Other: Ingredients:
Time:
Hour/Hour and a half
Difficulty:
A Barner could do it
Serving Size:
3 pies
  1. 1 c. Mashed Pintos w/juice
  2. 1 c. Coconut
  3. 1 c. pecans (i chop mine)
  4. 4 eggs
  5. 3 c. sugar
  6. 1 Tb. Vanilla
  7. 2 sticks butter
Preparation:
  1. Get 3 pie crusts. I use the ones you roll out but the preformed are great too. You can make your own crust but to me its a waste of time.
Instructions:
  1. Mix all of the ingredients together, throw them in the pie shells, and bake at 300°F for one hour.
  2. It's even better with a big scoop of vanilla ice cream on it.

Yep I have had one. Pecans are better IMO but if you want a similar pie and don't have any pecans try this out.

I don't think my family would let me in the door for the holidays if I showed up with a Pinto Bean Pie and the Vinegar pie from Bayou!! Well at least I would be able to tell them what the pies are called!!!
