Oven Roasted Duck
Other: Ingredients:
Time:
1/2 hr prep, 2 hrs cook
Difficulty:
Cajun men cook this
Serving Size:
4-8 depending on size of duck
  1. 4 Large Ducks
  2. onion
  3. apple
  4. red wine
  5. orange juice
  6. 1 can mushrooms
  7. green onions - chopped
  8. flour
  9. salt & pepper
  10. 2 strips bacon per duck
Preparation:
  1. Get up 4 am, ride in boat to duck blind. Remind self to wear more clothes next trip. Remind self to bring license and shells next time.
  2. Borrow shells from hunting partner and shoot 2 Mallard ducks each. Get back in boat with wet dog and travel back to landing. Go home and clean ducks then let them sit for a few days to season in the fridge.
Instructions:
  1. 1 - season ducks inside and out with salt and pepper
  2. 2 - stuff each duck with sliced onion and apples. you do not have to core or peel the apples.
  3. 3 - flour each duck and put in roasting pan breast side up. If you have fewer than 4 ducks use smaller pan.
  4. 4 - place bacon on each duck making an X on the breast
  5. 5 - add wine and orange juice using ratio of 1 cup wine to 1/2 cup orange juice. You only want about an inch or so of liquid in the pot.
  6. 6 - cook in preheated 425 oven uncovered for 20 minutes. Reduce heat to 325, add chopped green onions and mushrooms. Check liquid and add if needed.
  7. 7 - cover and cook 2 hours till tender
