Pot Roasted Wild Duck

Description:
Variation of Oven Roasted Duck often seen at Duck Camps. Makes a good one pot meal.
Other: Ingredients:
Time:
1/2 hr prep, 1 1/2 hrs cook
Difficulty:
Moderate
Serving Size:
4
  1. 2 large ducks split in half
  2. 1 large onion quartered
  3. 4 carrots cut in pieces
  4. 2 ribs celery cut in pieces
  5. 6 new potatoes
  6. 2 strips bacon
  7. 1 cup water
  8. 1 cup dry red wine
  9. 2 tsp thyme
  10. 2 tsp sage
  11. 2 tsp marjoram, rosemary or oregano
  12. 1 tsp salt
  13. 1/2 tsp black pepper
  14. 1/4 tsp cayenne red pepper
Preparation:
  1. Don't crowd the pot. Use at least a 6 quart preferably cast iron or enameled cast iron and you will be rewarded.
Instructions:
  1. 1 - season duck generously with salt, pepper and other seasonings. Place ducks in pot.
  2. 2 - pour wine and water in pot then place 1/2 strip bacon on each half duck.
  3. 3 - cover pot and bake at 375 for 1 1/2 hours. Baste every 30 minutes.
  4. 4 - add potatoes, onion, carrots, celery and cook uncovered an additional 1 hour. baste as needed
