Ellender's Roast Duck

Louisiana Senator Allen Ellender served this dish to President Nixon who proclaimed Ellender "Chef Supreme"

It's not much different from the duck camp pot roast.
Other: Ingredients:
Time:
1/2 hr prep, 1 hrs cook
Difficulty:
Moderate
Serving Size:
3
  1. 1 clove garlic
  2. 2 stalks celery - quartered
  3. 1/2 apple - quartered
  4. small onion - quartered
  5. 2 tbsp bacon drippings
  6. salt & pepper
  7. 1 medium onion - chopped
  8. 1 bay leaf
  9. 1 clove garlic - minced
  10. 1/4 bell pepper chopped
  11. 1/8 tsp thyme
  12. 1/8 tsp hot sauce
  13. 1/8 tsp Worchestershire
  14. 1/4 tsp salt
  15. 4 oz can button mushrooms
  16. 3 tbsp water
Instructions:
  1. 1 - grease duck inside and out with bacon drippings and season with salt and pepper. slice the garlic then stab the breast and thigs a few times inserting garlic pieces. stuff the duck cavity with quartered apple and onion .
  2. 2 - In 6 qt dutch oven add onion, garlic, bell pepper, bay leaf, hot sauce, worchestershire, celery and water. add more water during cooking so vegetables don't burn. Place duck on rack in dutch oven, cover and bake 1 hour at 350F till duck is tender.
  3. 3 - make gravy from pan drippings and cornstarch or roux. add mushrooms, return duck to pot and simmer another 15 min.
  4. 4 - serve with steamed rice with gravy

Bayou,

could i get away with not using a dutch oven? I do not own one and don't really no one who does (not within close proximity anyway). i do own a roasting pot with a lid do you think i could use that?

Yep a pot with a lid will work as long as the duck fits in it.
