Crushed-Peppermint Cheesecake

1 1/2 plus 4 hours to cool

  1. 12 ounces creme-filled chocolate sandwich cookies, such as Oreos, broken into pieces
  2. 3 tablespoons melted butter
  3. 1 1/2 pounds cream cheese, at room temperature
  4. 3/4 cup sugar
  5. 1/3 cup sour cream
  6. 4 eggs
  7. 2 tablespoons all-purpose flour
  8. 1 teaspoon vanilla
  9. 1/2 teaspoon peppermint extract
  10. 1/2 teaspoon salt
  11. 1/3 cup coarsely crushed peppermint candy
Instructions:
  1. Place cookies in a heavy zip-lock plastic bag and crush with a rolling pin.
  2. Pour into a buttered 9-inch round springform pan and pour melted butter over crumbs; mix to coat, then press evenly over bottom and about 1/2 inch up sides of pan.
  3. Bake in a 300° oven until crust is slightly darker and looks a bit dry, about 10 minutes (leave oven on).
  4. with a mixer on medium speed, beat cream cheese and sugar until well blended.
  5. Beat in sour cream.
  6. Add eggs one at a time, beating to blend after each addition.
  7. Beat in flour, vanilla, peppermint extract, and salt until smooth.
  8. Pour cream cheese mixture into pan over baked crust.
  9. Bake until edges are just golden and center jiggles slightly when pan is gently shaken, about 1 hour. Run a knife around edge of pan rim.
  10. Place pan on a wire rack and cool cheesecake completely in pan.
  11. Cover and chill until cold, at least 4 hours or up to 2 days.
  12. Run a knife around rim again, then release rim.
  13. If any liquid has pooled on surface of cheesecake, blot dry gently with a paper towel.
  14. Decorate top of cake with crushed peppermint candy, pressing it in gently with your hands.

Re: Crushed-Peppermint Cheesecake

OK, I made the above cheesecake for our office holiday potluck. I decided to go a little off the recipe and melted some Candy Cane Hershey Kisses which I poured over the top of the cheesecake after it had cooled and then just added a tiny bit of crushed candy cane (for appearance).

Well after being in the refrigerator for a day the melted Hershey Kisses became hard, like peppermint bark which in turn made the cutting of the cheesecake quite difficult.

Does anyone know what I could of added to the melted Candy Cane Hershey Kisses so they would not have harden so much. Maybe some Crisco?? Thanks

(anyway, the cheesecake was a hit despite having trouble cutting it!!!)
