Braised Cabbage

Tried something different this New Year. This may be the best braised cabbage I have made.

You can buy the Black & Red spice directly from Spice House or make your own. I suggest a ratio of 2or3 to 1 black pepper to red pepper
Other: Ingredients:
Time:
15 min prep - 20 minutes braising
Difficulty:

Serving Size:
4-6
  1. 1 medium head cabbage
  2. 1 medium onion
  3. 6 slices bacon
  4. 1/3 cup chicken stock or broth
  5. 1/3 cup carrot juice
  6. 1/4 tsp kosher salt
  7. 1/2 tsp Spice House Black & Red Spice
Instructions:
  1. render down the 6 slices of bacon and remove from braising pan.
  2. saute the onion in bacon dripppngs till soft and caramelized.
  3. add the chopped cabbage and continue to saute till some color starts showing on the cabbage leaves.
  4. add chicken stock and carrot juice, season with salt and pepper.
  5. bring to boil, cover pot and let simmer 20 minutes or till very tender. Give pot a stir or two during cooking.
  6. serve hot from the pot.
