Potato Soup

Yummy potato soup....
Other: Ingredients:
Time:
15-20 minutes
Difficulty:
Easy
Serving Size:
Enough to feed a small army.
  1. 5 lb bag of potatoes, peeled, cut and cubed
  2. 1½ Ground Beef (Optional)
  3. 1 large onion
  4. 4 cans of chicken broth with roasted garlic
  5. ¼ cup butter
  6. 2 ½ teaspoon of salt
  7. 1 ¼ teaspoon or pepper
  8. 1 cup whipping cream or half and half
  9. 2 Cups of Shredded Cheese
  10. 3 Tablespoons chopped fresh chives
  11. (Optional)
  12. 1 (8 once) container sour cream (Optional)
  13. 4 bacon slices, cooked and crumbled. (Optional)
  14. Dash of Texas Pete (Optional)
  15. Ritz (Optional)
Preparation:
  1. Brown the ground beef (optional..We love it with it)
  2. Cut and cube the potatoes
  3. Slice onion (I use the onion flakes)
Instructions:
  1. Put the ground beef, potatoes, and onions in a crock pot.
  2. Add butter, salt and pepper.
  3. Pour enough broth to cover.
  4. Cover and cook on HIGH for 4 Hours or on LOW for 8 hours or until potatoes are tender.
  5. Mash mixture until potatoes are coarsely chopped and soup is slighty thickened; stir in cream, a cup of cheese (however much you desire) and chives(optional).
  6. Optional: Top with sour cream, bacon, cheese, Ritz and Texas Pete.

I'm always willing to try a new potato soup recipe. Never have tried adding ground beef but sounds delicious. I also like a little hot sauce in my bowl.
