Description:
good way to use up leftovers in an unusual way. These may be an entre or an appetizer you be the judge.

Serving Size:
Makes 8 2 1/2" cakes
  1. 2 cups cooled or leftover cooked rice
  2. 3/4 cup fine chopped ham
  3. 1/3 cup grated parmesan cheese
  4. 2 large eggs beaten and divided
  5. 1/2 cup plain dry breadcrumbs
  6. 1/4 tsp black pepper
  7. about 3 cups vegetable oil
Preparation:
  1. Use a deep fryer, high side skillet or deep pot with a deep fat thermometer. Preheat oil to 350F
Instructions:
  1. Mix together rice, ham, cheese, 1 beaten egg and black pepper.
  2. Put remaining egg and breadcrumbs in separate shallow bowls.
  3. Dampen your hands and roll out mixture into 8 cakes about 2 1/2 inches in diameter.
  4. Dip cakes in egg then breadcrumbs.
  5. Fry in two batches turning once or twice till golden brown (2-3 min) and drain on paper.
