Description:
My favorite new cake. I would like to try this using apple slices and apple juice in the frosting but the Pear is insanely good. It's also a beautiful cake that would look good for Easter.
Other: Ingredients:
Time:
30 min prep, 50 min bake, 1 hr cool
Difficulty:
sort of easy
Serving Size:
8-10 slices
  1. 4 oz white chocolate nibs or chopped
  2. 1 1/2 cup all purpose (plain) flour
  3. 1 1/2 tsp baking powder
  4. 1/4 tsp salt1/2 cup sugar
  5. 3 large eggs separated
  6. 1/2 cup milk
  7. 15 oz can pear halves
  8. FROSTING
  9. 3 cups confectioners sugar
  10. 1/3 cup melted unsalted butter
  11. Reserved pear syrup
Preparation:
  1. Gather up mixing bowls, mixer and measuring tools.
Instructions:
  1. Preheat oven to 325F
  2. Melt chocolate in double boiler
  3. Mix flour, baking powder and salt in bowl
  4. Use electric mixer to beat butter and sugar together till creamy. Add egg yokes one at a time till just blended on medium speed.
  5. Turn mixer down to low and alternately add dry ingredients, white chocolate and milk till blended.
  6. Beat egg whites till stiff peaks form then using a spatula fold them into the cake batter.
  7. Butter and flour a 9 inch tube pan. Spoon half the cake batter into the pan.
  8. Slice the pears into thin wedges and spread them on top of the batter (reserve the liquid for the frosting) then spoon the rest of the batter into the pan over the pears.
  9. Bake about 50 minutes or till the cake tests done. Let the cake cool in the pan for 10 minutes before turning out onto a rack to cool completely.
  10. To make the frosting mix sugar and butter in a bowl then beat in enough of the pear liquid to make a spreadable frosting.
  11. Spread frosting over top and sides
