Black-Eyed Pea Salad

Very Good!
Preparation:
  1. Ingredients

  2. * 3/4 cup oil
  3. * 1/4 cup sugar
  4. * 1/4 cup balsamic vinegar
  5. * 1 (15-ounce) can black-eyed peas, drained and rinsed
  6. * 1 bell pepper, diced
  7. * 1/2 cup diced green onions
  8. * 1 large tomato, diced
  9. * 1 red bell pepper, diced
  10. * 1/4 cup freshly chopped parsley leaves
  11. * 3 tablespoons freshly chopped thyme and oregano leaves mixed
Instructions:
  1. Directions

  2. In a small bowl, whisk together the oil, sugar and vinegar.

  3. In a large bowl mix together the remaining ingredients. Pour dressing on top of salad and mix well.

  4. I used 2 cans of black eyed peas and one can of diced tomatoes. Other than that, I followed the recipe.
