Chipotle Mayonnaise

Instructions:
  1. 2-3 CANNED CHIPOTLE CHILES IN ADOBO SAUCE (if small use 3)
  2. 1 TEASPOON ADOBO SAUCE
  3. 2 TEASPOONS WORCESTERSHIRE SAUCE
  4. 1 CUP MAYONNAISE
  5. REMOVE SEEDS AND MINCE CHIPOTLE'S TO A PASTE. ADD ALL INGREDIENTS TOGETHER, STIR UNTIL COMBINED. REFIGERATE AT LEAST 8 HOURS. In a pinch, you can just fridge for 4 hrs. and use, but 8 is better. For the best flavor, mix it all up and fridge it for at least 24 hrs. before using. ENJOY

  6. You can add 3 or more TBS of well drained horesradish to this for even more excitement.

Alternate method of preparation.

Place all ingredients in food processor. Press button 3 times for 5 seconds then place in container for refrigerator.

I really like this stuff also Wassabi Mayonnaise. Great on roast beef sandwiches, burgers and seafood. Makes a killer tarter sauce if you like a little extra kick. Love it with seared scallops.

Im seeing this chipotle mayo in just about every restaurant lately. My favorite use so far... Put a smear of it on a plate and place a crab cake on top of it. It goes really well with crab cakes.

I was at the deli the other day buying cold cuts for sandwiches. We have been going out on the boat fishing lately and pack a lunch. I found Chipotle Ham and it was very good.

I know its old news but Chipotle Tabasco is pretty good. I like it on a burger.
