Smoked Beef Brisket, allowed to rest, then sliced fairly thin against the grain
Flour fajita shells
sliced tomato, or chopped
chopped bibb lettuce
sliced red onion
chopped jalapeno
Build Gyro by placing lettuce in shell, topped with tomato, then beef, red onion, and diced jalapeno if desired
Top with Southwestern Tzatziki sauce...
medium cucumber, peeled, finely diced and strained of juice
3 garlic cloves, finely diced
2 cups plain greek yogurt
1/3 chopped fresh dill
juice of 1/2 a lemon
salt and pepper to taste (I go easy)
1 TBS chopped fresh parsley
2 TBS chopped chipotle in adobo sauce (or to taste)
Mix all ingredients, chill for at least one hour or overnight
Alternate ideas - use pitas, used grilled leg of lamb, omit chipotle for a true middle eastern tzatziki - or change toppings as needed
