Hoppin John

Getting back to an old favorite tonight that I havent cooked in forever. I told a buddy of mine I was cooking Hoppin John and he had no idea what I was talking about. Poor guy haha..

SOAK: 8 HRS., PREP: 10 MIN., COOK: 2 HRS., STAND: 10 MIN.
1 cup (8 ounces) dried black-eyed peas
10 cups water, divided
3 bacon slices
1 small onion, chopped
1 green bell pepper, chopped
1 cup uncooked long-grain rice
1 ½ teaspoons salt
Garnishes: green onion pieces, tomato wedges
PLACE peas in a Dutch oven or large saucepan. Add water to cover 2 inches above peas; let soak 8 hours. Drain peas, discarding water.
BRING peas and 7 cups water to a boil over medium-high heat in Dutch oven. Reduce heat to medium, and simmer, uncovered, 1 ½ hours or until peas are tender.
COOK bacon in a large skillet 5 minutes or until crisp; remove bacon, and drain on paper towels, reserving drippings in skillet. Crumble bacon.
SAUTÉ onion and bell pepper in hot drippings in skillet over medium heat 5 minutes or until tender. Add vegetable mixture, remaining 3 cups water, rice, and salt to peas. Cook, covered, over medium heat 20 minutes or until rice is tender. Remove from heat, and let stand, covered, 10 minutes before serving. Sprinkle with crumbled bacon. Garnish, if desired.




gonna go great with some Oven Fried Chicken, Okra and Tomatoes, and Cornbread...I'm hungry already lol.:biggrin:

I love dry beans and rice but I really, really, really don't like black eye peas. I used to just eat a spoonfull on New Years but don't even do that anymore. But I do like Hoppin John and found that dry black beans work wonderful as a substitute for black eye peas.

Fried okra, sliced tomato or smothered okra and tomatoes, sliced tomato, cornbread, need a big wedge of raw onion and maybe a pot of greens. I usually do my dry beans with a ham hock, ham bone, leftover ham, link sausage, smoked turkey legs or wings and I got a meal in a pot. Even my Yankee wife likes this.
 
I love black eyed peas, especially hoppin john! When I have time, I make my own, but in a pinch, I reach for Margaret Holmes Hoppin John.

Margaret Holmes has a very good line of canned southern classics. For canned, it's very hard to beat. I usually add something to canned greens, beans, or whatever, but with this stuff, there is no need. Their mixed greens and Triple Succotash is very good.

I'm not familiar with that brand but the squash & onion and the okra, tomato & corn look like something I would like to try. I suppose it's on par with brands like Sylvia's and Glory.
 
Perhaps I hould have went with the canned variety tonight. You know, no matter how often you cook, you always have that night where things dont go your way? I scorched the bottom of the Dutch Oven doing the Hoppin John tonight and it all turned into a horrible mess. Oh well, thats what I get for trying to have too much goin on at one time I guess. :frown:
