Heat oilt in saucepan over medium heat
Add curry, cardamom, and cook 30 seconds or until fragrant
Add tomato/onion/ginger mix to pot, simmer 2 mins. or until sauce thickens
Stir in frozen veggies, garbanzo beans, coconut milk, season with salt and pepper.
Cover, reduce heat to medium low, and simmer for 6-7 minutes until veggies are tender
Serve over rice, sprinkle with almonds.
