Toast almonds in saucepan over medium heat 3 to 5 mins, until fragrant. Remove and set aside to cool.
Add oil to saucepan, saute onions 2 to 3 mins. until translucent.
Stir in ginger, quinoa, carrot juice, season with salt/pepper. Bring to boil, and cover for 15-20 mins until all liquid is absorbed.
Remove from heat, stir peas into quinoa. Cover and let stand for 10 mins. until peas are thawed.
Stir apple, coconut, almonds into salad
Serve warm or at room temp.
