Assemble by smearing cream cheese on bottom of bagel, layer red pepper then top with a tomato slice. Drizzle with shallot relish, sprinkle with basil and top with fresh cracked pepper.

We still make these or some variation of them. My kids call them cheese dreams and sometimes they use sliced white bread or sliced french bread.

This sounds yummy...I'm going to have to try it.

One of my favorite but simple bagel variations is a grilled whole wheat bagel w/cream cheese with chives + sliced tomato. Put all of it together and grill it like a grilled cheese sandwich = yum yum.
