Preheat oven or grill to 400 degrees F.
Place 4 16 inch lengths of foil on work surface. Shape each piece into foldable bowls.
Coat foil with cooking spray.
Place 1 slice of toast into each foil packet.
Combine mushrooms, asparagus, and shallots in a medium-sized bowl. Add 1/4 cup broth, and season with salt and pepper.
Divide veggie mixture amongst the 4 foil packets.
Whisk together remaining 1 1/2 cups broth, egg, egg white, thyme in small bowl. Season with salt and pepper to taste.
Drizzle each foil packet with 1/2 cup broth mixture.
Fold foil packets shut and roll up edges to seal.
Transfer packets to baking sheet and bake for 25-30 mins.
Transfer to serving plates. Sprinkle with feta cheese.
This dish goes well served on basmati rice.
