Question: Fried Green Tomatoes

I fried up some today - outstanding. I would like to use them for an appetizer at some friends house tomorrow, but need a good dipping sauce. Any ideas?

I love FGT's.

Normally I eat them without sauce, but once I got crazy and tried dipping them in some leftover Guthries sauce and it was pretty good. If you know how to make something close to Guthries sauce I would recommend trying that.

1 cup apple cider
1 tablespoon brown sugar
3/4 cup buttermilk
3/4 cup mayonnaise
2 tablespoons BBQ sauce
1 lime, juiced
4 scallions, sliced thin
Kosher salt and freshly ground black pepper

CUCUMBER DIPPING SAUCE - aoli de concombre

3/4 cup sour cream or 1/2 cup sour cream 1/4 cup mayo
1 heaping tablespoon chopped chives
1/2 cup grated cucumber ( seeds removed)
1 tsp fresh lemon juice
1 tsp kosher salt (better yet use Portuguese salt cream)
a dash of cayenne pepper
a dash of hot sauce

mix well and serve as mayonnaise for the fried green tomatoes.

Creole Dipping Sauce

1 cup mayonnaise
Juice of 1/2 lemon
1 tablespoon minced capers
1 tablespoon minced onion
1 teaspoon Dijon mustard
1 teaspoon horseradish
1 teaspoon paprika
4 sprigs cilantro or parsley, chopped
1/2 teaspoon Worcestershire sauce

Combine all ingredients until well-blended. Refrigerate until ready to use.


And this one's from Emeril...

Creole Remoulade Sauce

3/4 cup vegetable oil
1/2 cup chopped green onions (green and white parts)
1/2 cup chopped yellow onions
1/4 cup fresh lemon juice
1/4 cup chopped celery
3 tablespoons Creole or other whole-grain mustard
3 tablespoons ketchup
3 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped garlic
2 tablespoons prepared horseradish
1 teaspoon salt
1/4 teaspoon cayenne
1/4 teaspoon freshly ground black pepper

Combine all the ingredients in a blender or a food processor fitted with a steel blade and process until fairly smooth, about 30 seconds.

Transfer to an airtight container and refrigerate for at least 1 hour before using. (The sauce will keep for up to one week in the refrigerator.)
 
1000 Island dressing is actually pretty good with them. One of the first restaurants I cooked in, we made a Memphis dressing with Feta Cheese that was AMAZING with Fried Greens....I'll try to find the recipe for you. I know it is a mayo based sauce and has a little cayenne and capers in it...but the feta cheese just set it off when paired with the tomatoes.

1000 Island dressing is actually pretty good with them. One of the first restaurants I cooked in, we made a Memphis dressing with Feta Cheese that was AMAZING with Fried Greens....I'll try to find the recipe for you. I know it is a mayo based sauce and has a little cayenne and capers in it...but the feta cheese just set it off when paired with the tomatoes.
I would like to try that Memphis Dressing and you are right thousand island dressing is pretty good on fried green tomatoes. I like thousand island dressing as a dipping sauce for fried chicken tenders and as a marinade for lamb. My cucumber aoli is also very good on baked or grilled fish.

You know how you feel about blackeyed peas and garbanzo beans? I have that mutual feeling for cucumbers lol :D
 
OK found it...its good to keep all recipes :) I can't remember them all of the top of my head lol...just takes a little digging.... (I even found the menu picture on my jump drive, haha)
