Any New Tailgating Recipes or menu ideas?

It's getting that time of the year. How about some new ideas for another run at the BCS. Man cannot live on bread alone he has to have some good snacks.

What are some of your favorite game day snacks or game day meals?

I love cold fried chicken
cold boiled shrimp & cocktail sauce
4-5 dozen raw oysters are a real treat
Pulled Pork
Smoked brisket
Fried Meat Pies
Hot Dogs, Hamburgers, tacos and chili
Bama stew
Buttermilk pie
Fried fruit pies
Banana nut layer cake with pineapple cream cheese frosting
Red Velvet cake
Iced football shaped sugar cookies
Ice Cream Sundays and banana splits
Homemade Chex Mix
Thin sliced deli meats with Cheese & crackers,
Big thick deli meat sandwiches
Steak & baked potatoes
Pasta salad with small shrimp
Conch chowder & Oyster stew
Baked potato soup to go with that big Deli Sandwich

Let's get some recipes out there. Anyone got a new one?

My wife does a bread pudding to die for. I am looking for some new recipes that you can fix a day or so ahead and cook once you get to T-Town. we always try to theme cook i.e. pork for Arkansas but we also like cook something new and different.

I love cold fried chicken
Just like meatloaf and pizza. I fry chicken or cook a meatloaf and let it cool, then straight to the fridge. Eat chicken as-is and sandwich bread for the meatloaf!

As for menu ideas, I generally always make a Strawberry Pretzel and add a drop or two of purple food coloring to the strawberry Jello so it sets up CRIMSON. And I reserve a little bit of the middle layer to pipe out a "Script A" on the top.



Strawberry Pretzel

Crust:

2 cups of crushed pretzels (enough to line bottom of pan at least 1/4 inch)
1/3 cup sugar
2/3 cup melted butter

Filling:

8oz block of cream cheese
1 cup sugar
8oz tub of Cool Whip

Topper:

6oz box of strawberry flavored gelatin
2 cups water
16 oz frozen sliced strawberries



Crush pretzels in bottom of 9x13 pan. Add sugar and butter and press into a crust. Bake 10 mins in a 350 degree oven. Allow to cool.

Cream sugar and room temperature cream cheese then fold in Cool Whip. Spread evenly over pretzel crust.

Boil water and add gelatin mix. When dissolved, remove from heat and add frozen berries. When cooled to room temp pour on top of cream layer and refrigerate until completely set.

Some of my tailgate favorites:

BBQ Nachos- I like to top my nachos with Rol Tel cheese dip, top that with BBQ, Jim n Nicks Habenero bbq sauce, jalapenos and sour cream.

Home made chili or taco soup.

Hot wings

Brats & burgers.

Steamed shrimp or Low Country Boil.

Atomic buffalo turds (stuffed jalapenos smoked on the Big Green Egg)

Ribs and Pork shoulders on the BGE.

Veggie Tray.

For dessert:

Blueberry Cream Pie.

Sour Cream Banana Cake-- thanks Bayou :)

Chocolate Oatmeal cookies.

Caramel Peach ice cream.

Hot banana pudding.

Crab Stuffed Jalapenos

You can also use chopped shrimp, lobster, crawfish or scallops

8 oz cream cheese
6 oz shredded Parmesan, cheddar or other good melting cheese
8 oz crab meat
3 scallions finely chopped both white and green parts
handfull of parsley chopped
juice of 1 lemon
pinch of salt.
about 40 peppers
1 cup all purpose flour
1 cup corn meal (I like corn flour too)
2 tsp salt
3-4 eggs beaten with a bit of water added.

Parboil the peppers to make them soft then shock them in ice water. Clean the inside of the peppers by taking the top off and digging out the seeds and membranes. Stuff with the crab and cheese mix then dip individually in the egg, roll in the flour and cornmeal then let sit on a rack for about 30 min. Heat oil to 375 and fry in small batches till golden brown about 4 min. Serve with ranch dressing, blue cheese dressing or tarter sauce.
