Roasted Garlic Collard Hash

1.Combine broth and 1/2 cup water in large pot. Bring to boiling. Add collard greens. Return to boiling; reduce heat and simmer 45 minutes. Drain and squeeze out excess water. Set aside.
2. Meanwhile, wrap potatoes and garlic individually in aluminum foil. Grill potatoes adn garlic until fork tender, about 45 min to 1 hour. Cool potatoes slightly and chop into big chunks. Remove garlic cloves from blub. Set aside.
3. Place large cast iron skillet on grill rack. Heat 3 minutes. Add bacon to skillet and cook until crisp. Remove to cool; break into pieces. Drain excess drippings. Add oil and butter. Add potatoes and garlic cloves. Cook and stir 5 minutes. Stir in collard greens. Add crumbled bacon, and season with salt and pepper to taste. Cook 5 minutes more.

Per serving: 250 calories, 31 g carbohydrate, 37 g protein, 12 g fat, 7 g fiber, 25 mg cholesterol, 335 mg sodium.
