What kind of beer do you like to drink? I'm of the theory of don't cook with it if you won't drink it. Plus, you'll probably want to "sample" some of the beer while you are cooking. A lager would probably be a good place to start. Maybe a Sam Adams or something like that?
okay so i just tried a piece of really strong cheddar with an imerial stout and that was pretty tasty if you want to get a little crazy.
