We just got back from the Eggfest in Melbourne FL and the food was great! One cook did won ton wrappers pressed into a mini muffin pan and on top of that he put cooked sausage,scrambled the eggs filled the won ton lined muffin cups then put back on the BGE to cook the eggs.
Another cook had a griddle that was rectangular with a high back. He cooked hash browns, bacon and scrambled eggs. The top of the BGE was left open and the bottom draft door was left closed.
Should be a cookbook coming out within a month or so on
