The following morning I pull the roast out and shred it and return it to the crock pot to cook for a couple of add'l hours on low.

BamaGirl do you soak the beans overnight before you put them in the crockpot? This really sounds good.
no you just add everything in the crock pot and go to bed ... be sure to fill it to the top with water and sometimes I add a little add'l water when I get up if it doesn't seem soupy enough
