    Lemon Supreme Pound Cake

    Description: This is a simple, lemony pound cake that's sure to please.
    Time: 1 hour, 30 minutes
    Difficulty: Easy

    Ingredients:
    1. 1 box lemon cake mix
    2. 1 3.5 ounce box of instant lemon pudding
    3. 1 teaspoon lemon extract
    4. 1/3 cup sour cream
    5. 3/4 cup orange juice or apricot nectar
    6. 4 eggs
    7. 1/2 cup vegetable oil
    8. 1/4 cup lemon juice
    9. 1 1/2 cups confectioners' sugar
    Preparation:
    1. Allow eggs to come to room temperature. Preheat oven to 350 degrees. Grease and flour 10-inch
    2. tube pan.
    Instructions:
    1. In a large bowl, combine cake mix, pudding
    2. mix, sour cream, lemon extract, orange juice,
    3. eggs
    4. and oil.
    5. Mix to combine, then beat on high speed for
    6. 3 minutes.
    7. Pour batter into a 10 inch tube pan.
    8. Bake in the preheated oven for 60 minutes,
    9. or until a toothpick inserted into the cake
    10. comes out
    11. clean.

    12. While cake is baking, make the glaze:
    13. In a small bowl, combine lemon juice and
    14. confectioners sugar; stir until smooth.
    15. Remove cake from oven, and with cake still
    16. in pan, use a wooden skewer to poke holes in
    17. what
    18. will end up being the bottom of your cake.
    19. Pour half of the glaze over hot cake, allowing
    20. glaze to soak into holes and tipping pan to
    21. allow
    22. excess glaze to run between cake and sides
    23. of pan.
    24. Allow cake to cool in pan 10 minutes.
    25. Remove from pan and cool completely on
    26. wire rack before
    27. pouring the remainder of the glaze over the
    28. top and down the sides of the cake.

    This one I must try. I've never made a lemon pound cake with orange juice or apricot nectar. Bet it's delicious! Thanks Staci!

    My mother and now my wife makes their's using the apricot nectar. Tastes fantastic.
