    Low Country Shrimp & Grits

    Description: Good warm comfort food on a cold evening. Then again, grits are my favorite comfort food anyway!
    Serving Size: 4 servings
    Time: 30 minutes
    Difficulty: Easy

    1. 1 lb. raw shrimp, peeled
    2. 2 Tablespoons fresh lemon juice
    3. Salt to taste
    4. Cayenne pepper to taste
    5. 3 Tablespoons bacon grease
    6. 1 small onion, finely chopped (about 1/4 cup)
    7. 1/4 cup bell pepper, finely chopped
    8. 2 Tablespoons all-purpose flour
    9. 1/2 to 3/4 cup hot water or stock* (chicken, vegetable, or shrimp)
    10. Grits (serving for 2 - 4)
    1. Chop onions, bell peppers finely.
    1. In a bowl, sprinkle the shrimp with lemon juice, salt, and cayenne pepper. Set aside. Heat the
    2. bacon grease in a skillet and saute the onion and pepper over medium heat until onions become
    3. transparent. Sprinkle the flour over the vegetables and stir constantly, until the flour begins to
    4. brown. Add the shrimp with a little of the juice and about 3/4 cup water or stock, stirring
    5. constantly and turning shrimp so they cook evenly. Cook for 2 to 3 minutes until the shrimp are
    6. done and the gravy is uniformly smooth, thinning with a little extra liquid if necessary.
    7. Cook grits according to package directions. I recommend cooking the grits in any leftover broth
    8. and adding a small amount of heavy cream to them just before serving.
    9. (* Note: Chicken broth works fine)
