    Mardi Gras Jambalaya

    Description: Creole Jambalaya!
    Serving Size: 8 servings
    Time: 20 min prep -- 35 min to cook
    Difficulty: Easy

    Ingredients:
    1. 3/4 cup chopped onion
    2. 1/2 cup chopped celery
    3. 1/4 cup chopped green pepper
    4. 2 tablespoons butter
    5. 2 garlic cloves, minced
    6. 2 cups cubed fully cooked ham
    7. 1 can (28 ounces) diced tomatoes, undrained
    8. 1 can (10-1/2 ounces) condensed beef broth, undiluted
    9. 1 cup uncooked long grain white rice
    10. 1 cup water
    11. 1 teaspoon sugar
    12. 1 teaspoon dried thyme
    13. 1/2 teaspoon chili powder
    14. 1/4 teaspoon pepper
    15. 1-1/2 pounds fresh uncooked shrimp, peeled & deveined
    16. 1 tablespoon minced fresh parsley
    Preparation:
    1. Chop veggies & peel shrimp
    Instructions:
    1. In a Dutch oven, saute the onion, celery and green pepper in butter until tender. Add garlic; cook 1 minute longer. Add the next nine ingredients; bring to a boil. Reduce heat; cover and simmer until rice is tender, about 25 minutes. Add shrimp and parsley; simmer, uncovered, for 7-10 minutes or until shrimp turn pink
